Cooking Time Savers

There is so many things we can discuss in this topic, so lets start with time savers... what do you do to save time for weekly meals?  By the time I get home, everyone is hungry and I need to feed fast, but make sure it is healthy and tasty...

  • One of the things I started late last year was preparing mince and vegetables in the weekend - so I could use the mixes for meatballs or bolognese etc.  I would buy a couple of kilos of mince, put in the food processor carrots, zucchinis etc (for some reason my son will eat vegetables more this way) chop them up, mix it all together, then bag them into meal size bags and freeze them. I never put any extras in (eg. sauce, eggs, crumbs etc) so I had the freedom to make what I wanted on the day.

    Then before work on the day (or night before)  I would take out the bags (defrost them in the fridge) and that night I could have a meal on the table 30mins later with fewer dishes.
  • After having a household full of guests a lot of the time - my next is another favourite.  If you are cooking for more than 8 a great meal is to do a baked glaze ham - everyone loves it, it is cheaper than buying steaks for a barbecue and best of all it provides many a meal for the following week.  Quiches, Omelettes, Ham sandwiches, ham with salads, pizza and more.
  • Boiling up rice the night before, letting cool.  Then place in fridge to make sushi the next night, or stirfry.  Just saves 20 mins off your cooking time.  p.s. I always cook my rice in the microwave - typically 1 cup rice to 2 cups water - cook for 15 mins -stir once
  • Do the quick meals in the week  - do a little extra for lunches the next day.
  • Have in the cupboard already prepared enough seasoning for a chicken meal (salads, wraps, sushi, stir fry etc).  I do enough to do at least 4 meals and store it in an airtight jar.  So I can quickly cook my chicken as soon as I get home.
  • Make a good vegetable soup in the weekend - to provide a few quick and easy meals (or starters if you have hungry ones)
  • Making a vegetable slice that does one nights dinner, then great as snacks, or lunch boxes for kids and adults too  - I do one with grated zuchinni, carrots, eggs, SR flour, cheese - kids love it 
  • Quick and easy pizza. I use pita bread, or tortillas, even savoury pastry for the base - put it on a pizza stone or a baking tray with Cooking paper on it - then put what is around on top.  Pizza sauce (or tomatoe paste, or sauce? whatever you have) Ham and cheese are popular kid ones, I personally love cooked pumpkin, red onion, feta, pesto, grated tasty cheese; left overs are even good.
  • Make a pie out of left overs.  put your left overs in a pie dish and put a slice of pastry on top, baste with milk (eg. a couple of teasp of milk spread over the pastry with a brush, or even clean hands do) - cook in your oven until the pasty is cooked
  • I often cook more vegetables than needed one night, knowing the next night I am going to make a quick vege dish (eg. left over cooked vegetables with pumpkin, or sweet potatoe, or potatoe) then either add a cheese sauce to it and put in the microwave to cook.  Or my favourite these days is to quickly heat it all up in a fry pan with olive oil.  Then for the last 5 minutes add feta.  Yum.  (if you really want to be naughty add little dolup of sour cream)
